Agurk Salat



Agurk Salat is a traditional Danish pickled cucumber salad, perfect for adding a tangy crunch to sandwiches, salads, or served as a side dish. This vegan version offers the same delicious flavors without the need for animal products.

Ingredients:

  • 3 large cucumbers, thinly sliced
  • 1 red onion, thinly sliced
  • 1 cup apple cider vinegar
  • 1/2 cup water
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon mustard seeds

Instructions:

Apple cider vinegar, water, sugar, salt, black peppercorns, and mustard seeds should all be mixed together in a saucepan

Over medium heat, bring to a simmer and stir until the salt and sugar are gone

Take the brine off the heat and let it cool down to room temperature

Slice the onions and cucumbers and put them in a large, clean jar or container

Fill the cucumbers and onions up all the way to the top with the cooled brine

Put the jar or container in the fridge for at least 24 hours before serving with a tight lid

You can keep Agurk Salat in the fridge for up to two weeks

Vegan BBQ Tofu Burger



A tasty vegan burger with fresh toppings, barbecue sauce, and grilled tofu.

Ingredients:

  • 1 block extra firm tofu, pressed and sliced into 1/2 inch thick slices
  • 1/2 cup barbecue sauce, plus extra for serving
  • 4 burger buns, toasted
  • 1 avocado, sliced
  • 1 tomato, sliced
  • Lettuce leaves
  • Salt and pepper, to taste
  • Optional: vegan cheese slices

Instructions:

Preheat grill or grill pan over medium heat

Brush tofu slices with barbecue sauce and season with salt and pepper

Grill tofu for 5-7 minutes per side, or until grill marks appear and tofu is heated through

Assemble burgers by placing grilled tofu on the bottom half of each bun

Top with avocado slices, tomato slices, lettuce, and optional vegan cheese slices

Drizzle with additional barbecue sauce, if desired, and top with the other half of the bun

Serve immediately and enjoy!

Smoky Chickpea Tomato Flatbread



This Smoky Chickpea Tomato Flatbread has a great mix of tastes and textures. Smoked paprika gives roasted chickpeas a rich, smoky flavor. They are then served on a whole wheat flatbread with cherry tomatoes, vegan cheese, and smoked paprika if you want. With fresh basil leaves on top, this flatbread is a healthy and filling meal that's great for any event.

Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes, halved
  • 2 whole wheat flatbreads
  • 1/4 cup vegan cheese, shredded optional
  • Fresh basil leaves for garnish

Instructions:

Turn on the oven and heat it up to 400F 200C

Mix the chickpeas with olive oil, smoked paprika, garlic powder, salt, and pepper in a bowl until they are well coated

In a baking sheet, spread out the chickpeas

Roast them for 20 to 25 minutes, or until they get crispy

Take the chickpeas out of the oven and set them aside

Spread out the flatbreads on a baking sheet

Put roasted chickpeas, cherry tomatoes, and vegan cheese if using on top of the flatbreads

Put the flatbread in the oven and bake for 10 to 12 minutes, or until the edges are golden and the toppings are warm

Take it out of the oven and add some fresh basil leaves on top

Cut it up and serve it right away
