Ingredients:
- 1 cup water
- 1/2 cup unsalted butter
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 2 eggs
- 1 teaspoon vanilla extract
- 1/4 cup granulated sugar substitute
- 1 teaspoon ground cinnamon
Instructions:
Preheat your oven to 375F 190C and line a baking sheet with parchment paper
In a medium saucepan, combine water, butter, and salt
Bring to a boil over medium heat
Reduce the heat to low and add the flour all at once
Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan
Remove the saucepan from the heat and let it cool for a couple of minutes
Add the eggs, one at a time, beating well after each addition
Mix in the vanilla extract
Transfer the churro dough to a piping bag fitted with a large star tip
Pipe strips of dough onto the prepared baking sheet, using a knife to cut the strips
Bake in the preheated oven for about 20-25 minutes, or until the churros are golden brown and crisp
In a shallow dish, mix the granulated sugar substitute and ground cinnamon
While the churros are still warm, roll them in the sugar substitute and cinnamon mixture until coated
Serve the sugar-free baked churros warm, and enjoy!
