Ingredients:
- 1 box brownie mix
- 1/2 cup 1 stick unsalted butter, melted
- 2 large eggs
- 1/4 cup milk
- 1 cup fresh mixed berries strawberries, blueberries, raspberries
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Whipped cream for garnish
- Additional berries for decoration
Instructions:
Preheat your oven to 350F 175C and line a cupcake tin with cupcake liners
In a mixing bowl, combine the brownie mix, melted butter, eggs, and milk
Stir until well combined
Gently fold in the mixed berries into the brownie batter
Spoon the brownie batter into the cupcake liners, filling each about 2/3 full
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out with a few moist crumbs do not overbake
Allow the cupcakes to cool in the tin for 10 minutes, then transfer them to a wire rack to cool completely
In a separate bowl, whip the heavy cream until it starts to thicken
Add the powdered sugar and vanilla extract and continue to whip until stiff peaks form
Once the cupcakes are completely cool, pipe or spoon a dollop of whipped cream onto each cupcake
Garnish with additional berries and a swirl of whipped cream on top
